I really like okonomiyaki, which is a savoury pancake with cabbage in it. You cook it yourself on a hot plate at the table, so it's something you end up eating slowly with other people.

I'd like to talk about okonomiyaki, a savoury pancake that people in Osaka eat all the time.
It's made from a batter of flour, egg and water, with a lot of shredded cabbage mixed in. Most people add pork, but you can put in almost anything, and the name actually means "grilled as you like."
You cook it on a hot iron plate, and in a lot of restaurants the plate is built into your table, so you turn it over yourself. At the end you brush on a thick brown sauce, add mayonnaise, and cover the whole thing with dried bonito flakes. The flakes move in the heat, which always surprises visitors.
In my family, we used to make it at home on Saturday nights, because my mother could use up whatever was left in the fridge. I still order it whenever I go back, and I think I like it as much for the way you eat it together as for the taste.
Q. Do people in your country still cook traditional food at home?
Some traditional dishes have moved out of the home, mainly because they take a long time to prepare. Okonomiyaki is an exception, though. It's cheap, it doesn't need much skill, and everyone at the table can join in, so plenty of families still make it at weekends. I think the dishes that survive at home are the ones that are easy to share.
