Part 1 で自分の犬の話をしていたところから、Part 3 では生息地の消失や研究費の配分が話題になります。この段差が、このテーマを難しく感じさせる理由です。必要な語は06に集めてあります。
out of this world は、並外れてすばらしいという評価の表現です。宇宙そのものとは関係がありません。Are you interested in outer space and astronomy? への答えの中で使うと、洒落を言ったように受け取られます。景色や体験の評価に回すほうが安全です。

green fingers と green thumb を混ぜない
この2つは同じ意味で、どちらがよく使われるかが地域で分かれます。have green fingers はイギリス英語やオーストラリア英語で、have a green thumb は北米英語でとくによく使われます。地域できれいに二分されるわけではないので、どちらを使っても通じますが、一方に決めておくほうが形を崩しません。green thumbs のように複数形にしたり、2つを合わせて言ったりすると、意味が取りにくくなります。

新しい語をゼロから積み上げるより、Part 1 で言ったことを言い直すほうが先です。主語を people や governments に替え、動詞をそのまま残すだけでも、Part 3 で通る言い方に近づきます。

質問には答えられています。頻度も場所も理由も入っています。ただ walk が3回続き、文がどれも同じ長さなので、5文あっても内容の展開はほとんど進んでいません。
中級の表現を足した場合
I do, yes. I walk to the station most mornings, which takes about twenty minutes. At weekends I try to get out for a longer walk, usually along the river rather than through the city. I'm not really doing it for exercise, but I always feel better afterwards.
珍しい語は1つも入っていません。most mornings、try to get out for、rather than、afterwards が入ったことで、平日と週末の違いと、歩く理由が分かれて伝わるようになりました。
上級の表現を1つだけ混ぜた場合
I do, yes. I walk to the station most mornings, and at weekends I try to get out along the river. It's less about exercise than about having half an hour to clear my head, especially after a long week at work. Even ten minutes outside makes a difference if I've been at my desk all day.
上級の表現は clear my head の1つだけです。歩く頻度と場所が先に置かれているので、この表現が理由として収まっています。ここに be blown away by や in the middle of nowhere まで足すと、通勤路を歩くという話に合わない語が混ざります。
種類全体を指すときは the を付けず、I like animals. の形にします。the を付けると、話し手と聞き手のあいだでどれを指すか決まっている動物になるので、I liked the animals in that documentary. のように、直前に話題が出ている場面でだけ使います。
ペットを飼っていると言うとき、breed は使えますか。
使えません。breed は繁殖させるという意味なので、I breed two cats at home. だと家で猫を繁殖させていることになります。飼っているは have がふつうで、家畜や鶏など数を飼う場面では keep も使えます。My uncle breeds sheep on his farm. のように、実際に繁殖させている場面なら breed が合います。
research に a を付けたり複数形にしたりできますか。
研究という意味の research は、ふつう不可算名詞として使います。研究1件を指したいときは a study に替えて、A recent study found that ... の形にするのが自然です。量を述べるなら a lot of research や a great deal of research のように、前に量の語を置きます。専門的な文脈で可算のように使われることもありますが、スピーキングでは不可算で通して問題ありません。
nature と the environment で冠詞が違うのはなぜですか。
指しているものが違うからです。一般的な自然を指す nature は、ふつう冠詞を付けずに in nature、spending time in nature のように使います。私たちを取り巻く自然環境を指すときは the environment の形が一般的です。日本語ではどちらも自然や環境と訳せるので、2語をセットで覚えておくと混ざりません。
space に the を付けることはありますか。
space は宇宙と空間の両方を表す語で、宇宙という意味ではふつう冠詞を付けません。I'm interested in space. や travel in space の形になります。空間やすき間という意味のときは、There isn't much space in my flat. のように量を表す語が付いたり、a space のように可算で使われたりします。outer space という言い方も宇宙を指し、こちらも無冠詞です。
interested と interesting はどう使い分けますか。
-ed は人が感じている状態、-ing はそう感じさせる側の性質を表します。自分に興味があると言うなら I'm interested in astronomy. で、対象のほうを評価するなら Astronomy is interesting. になります。I'm interesting. は自分がおもしろい人間だという意味になってしまうので、質問文の Are you interested in ...? をそのまま受けて答えると崩れません。
green fingers と green thumb はどちらを使えばよいですか。
どちらでも通じます。意味に差はなく、have green fingers はイギリス英語やオーストラリア英語で、have a green thumb は北米英語でとくによく使われるという違いです。自分がふだん学んでいる語彙に合わせて一方に決めておくとよいでしょう。気をつけたいのは形のほうで、green thumbs のように複数形にしたり、2つを合わせた言い方をしたりすると、意味が取りにくくなります。
Part 3 の自然と科学の話で、まず覚えるべき語はどれですか。
habitat loss、endangered species、conservation、climate change、funding のあたりから始めるとよいでしょう。いずれも、Part 1 で自分の話として言ったことを、そのまま社会の話に持ち上げるときの受け皿になります。There aren't many wild animals near my home. が habitat loss の話に、I read about space online. が funding の話につながります。
